Plum, pear & blueberry crumble with maple nut crust

Delicious. Healthy. Easy. Versatile. What’s not to love about this yummy dessert?

It can be made in individual ramekins or a large dish, with any seasonal fruit you have handy.

 

 Recipe

Stewed fruit: Slice about 10 plums and 3 pears, leaving the skin on, and cook over medium heat until soft, while you make the crumble.

Maple nut crumble: put 1/3 cup of each of almonds, cashews and macadamias in a food processor to form a course meal. Then add 2 tablespoons of each of pepitas and sunflower seeds and mix. Add a dash of vanilla and 2 T of maple syrup, then work all ingredients together by hand to form a crumble.

To assemble: Place softened fruit in an oven-proof dish. Add 1 cup of blueberries (fresh or frozen) and mix. Sprinkle crumble mixture on top.

Bake: At about 180 degrees C for 10-15 mins, or until crust is golden.

Just beautiful served with a creamy natural yogurt. Enjoy!
